The best Oatmeal I've tasted from a special trip to a Yoga Ashram last weekend from Jyothi aka Jacqueline Monica

A Lemon Can Only Dream 

serves 15 

2c oatmeal 
1-1/4c almond milk [save 1/4c for the end]
1-1/4c rice milk [save 1/8c for the end]
1/4 -1/2c fresh chopped/minced ginger
1/8 -1/4c fresh minced lemon rind 
1 tblspn fresh squeezed lemon juice
1/8 c succanat 
1/4c organic raisins 
3/4c boiling water

Mix all dry ingredients in medium sized saucepan, over med-low heat on gas range stove. gently add in rice milk and almond milk, 1/2 cup at a time, in 8 minute intervals, stirring gently, harmoniously in one clockwise direction, with a steady hand, calm heart, steady mind. At the end of every three stirs, gently swirl the oatmeal, making sure you lift and turn it from the center, observing it's consistency at all times, making sure none of it sticks to the bottom of the pan. After you have stirred in both the almond and rice milks, proceed to stir the boiling water in at 1/4 cup intervals, making sure the ratio is more oatmeal to liquid -- make sure the oatmeal clears the liquid at least 1/16th of an inch from the surface at this point. 

As the oatmeal has been boiling for about 30 minutes now, add 1/4c of almond milk, and 1/8 cup of rice milk intermittently, stirring in between. Almond milk prevails, Rice milk stretches the oatmeal, and water helps it boil to completion. Add the raisins. Sitr as you add, and when everything is in the pan, all of the ingredients, cover and let boil for 5 -10 minutes, checking consistency intermittently to ensure there is no stickiness at the bottom of the pan. 

The oatmeal should be creamy. It really should be amazing. Use your own judgement! Just make sure it stays Vegan, and make sure stays zingy. Taste for zinginess at the end. If it's not as zingy as you remembered, add a dash of fresh squeezed lemon juice, and an equal part of succanat. But I actually never took that last step. I trusted it was going to taste amazing, the entire time.
